• 2 slices whole grain or sprouted grain bread
• 2 oz avocado, sliced
• 1 small handful fresh baby spinach
• 3-4 slices cucumber
• 3 tablespoons store-bought beet hummus
• 2 tablespoons carrots, shaved or sliced into matchsticks
• 4-5 slices red or yellow bell pepper
• 2 oz sprouts
What you’ll do
1. Toast the bread. (optional)
2. Spread the beet hummus on one slice of bread.
3. Layer the spinach, avocado, cucumber, carrots and sprouts.
4. Top with the remaining slice of bread.
